Beef tallow is rendered fat from cattle.

Rendering is the process of melting and clarifying animal fat. It is done by slowly and steadily heating the fat to break it down, transforming it from a solid into a liquid. This purifies the fat by removing the moisture through evaporation.

Beef tallow contains no carbohydrates or protein; it is pure fat. Like olive, avocado and coconut oil, it consists of mostly saturated and mono-saturated fat.

Tallow has the appearance and texture similar to that of butter mixed with coconut oil. It is solid and white, and has a mild, subtle taste.

Isn’t Fat Bad for You?

Animal fat has been consumed as part of the human ancestral diet for six million years. Not only did they eat it without restriction, but fat was purposefully eaten by those who needed a boost in their nutrition such as the young, the old, and the child-bearing.

Beef tallow has been used in various forms for centuries. Before modern-age farming techniques, it was a common cooking fat found in most kitchens. However, it fell out of favor for many years due to misconceptions about the impact of animal fat on human health.

The shift began in the 20th century, when refined vegetable oils emerged as a so-called “healthier” alternative. In the 1950’s, the medical industry claimed that saturated fats increase the risk of heart disease by raising levels of LDL cholesterol in the blood. As a result, the use of tallow and other animal fats were discouraged in favor of vegetable oils.

In recent years, many health experts have completely changed their stance on saturated fat. New studies show that there is no link between saturated fat and heart disease, including 21 studies that followed 350,000 people for up to 23 years. It is believed that the type of saturated fat found in tallow has a mostly neutral effect on blood cholesterol levels. So much of the supposed risk of consuming saturated fat is questionable, to say the least.

Ironically, doctors now advise us to avoid many vegetable oils and seed oils because they can cause inflammation, oxidative stress and heart disease. Vegetable oils such as soybean oil, corn oil, canola oil, and sunflower oil are highly processed (not found in nature), unstable, oxidize easily, contain harmful additives, and create toxic byproducts when heated.
